North Canterbury Gin is a handcrafted small-batch gin inspired by the rugged coastline and botanical diversity of New Zealand’s South Island. Created by winemaker Mark as his very first gin, this distinctive expression captures the flavours, landscapes and natural character of the North Canterbury region.
Inspired by the coastal cliffs of Taylor’s Mistake, where the original idea for the recipe was born, North Canterbury Gin remains one of the most personal and authentic expressions within the Elsewhere collection.
Before entering the world of craft gin, Mark built his reputation as a winemaker in New Zealand. His experience with flavour development, terroir and natural ingredients became the foundation for this first gin project.
What began as an experiment quickly evolved into a signature expression that continues to represent the philosophy behind Elsewhere: capturing a sense of place through carefully selected botanicals and small-batch craftsmanship.
North Canterbury Gin reflects the diverse environments of New Zealand’s South Island. Coastal influences, native vegetation and locally sourced ingredients combine to create a flavour profile that feels both fresh and distinctive.
Many of the botanicals are wild-foraged or locally sourced, allowing the gin to express the natural character of the region while maintaining a strong connection to its origins.

To preserve the full character of the botanicals, the ingredients are steeped three times during production. This careful process allows the delicate citrus, floral and herbal notes to develop gradually while maintaining balance and clarity.
The result is a clean, expressive gin with remarkable depth and complexity.
On the nose, North Canterbury Gin opens with bright citrus aromas supported by gentle floral notes from lavender, roses and orange blossom.
The palate combines fresh fruit, herbal complexity and subtle savoury elements from the wakame and black olives. The finish is smooth, refreshing and elegant, leaving lingering botanical notes that reflect its coastal origins.
North Canterbury Gin is produced in exceptionally small quantities. Only 125 bottles were released in 2022, making it one of the most exclusive expressions in the Elsewhere portfolio.
This limited production allows careful attention to detail throughout the entire process and ensures that every batch retains its unique character.
The bright botanical profile of North Canterbury Gin makes it particularly well suited to a classic Gin & Tonic. Garnishes such as citrus peel or fresh bay leaf complement its natural flavours and enhance its aromatic complexity.
