Our journey began with a simple yet ambitious mission: to create exceptional, modern gins and other craft spirits using ingredients grown and foraged in Poland. We proudly operate from our own production facility in the heart of Warsaw, where we combine traditional methods with modern precision.

To unlock the most delicate and aromatic components from our botanicals, we rely on vacuum distillation, a method originally developed for use in scientific laboratories. This process allows us to extract flavour at lower temperatures, preserving fragile compounds that would otherwise be destroyed by heat.
This technique is not only more gentle, it’s also more precise. Vacuum distillation lets us work in fine-tuned temperature and pressure ranges, so that each fraction of vapour is carefully separated and captured. The result? A gin that is smooth, layered, and unmistakably refined.
After botanicals are macerated in alcohol, they are placed in a rotating flask with a 5-liter capacity. The flask spins constantly to keep the solution evenly distributed and prevent boiling. As evaporation begins under reduced pressure, the vapours rise into a chilled glass coil, where they condense into a pure, concentrated distillate.
This entire operation is controlled by computer, ensuring both precision and consistency, while maintaining the highest safety standards.
Vacuum distillation was first made possible in 1957 by Büchi Labortechnik in Switzerland. Today, we distill using advanced systems from Heidolph, a globally respected manufacturer of scientific and distilling equipment. Their technology allows us to achieve consistent quality while respecting the fragility of the ingredients we work with.
