


Ethical Spirits was founded on a simple yet powerful idea: to transform sake kasu—a byproduct of Japanese sake production often discarded in massive quantities—into the foundation for premium Japanese craft gin.
Since 2020, this Tokyo-based distillery has upcycled over 50 types of byproducts into high-quality gin. These include everything from skin-damaged fruits and waste beer (especially during the COVID-19 pandemic) to non-edible stems and leaves. Each ingredient is reimagined as either a base spirit or botanical, proving that sustainability and flavor can go hand in hand.
Located in the Kuramae district of Tokyo, Ethical Spirits Distillery is also home to Stage, a stylish bar and dining space on the second floor. Here, guests can enjoy a curated selection of gin cocktails and dishes that pair perfectly with the distillery’s innovative creations.
